Happy 2021! Our family had a restful and restorative end of the year, and I hope you did as well. One of the things that I look forward to this year is continuing to build this blog. It is always fun to introduce new food products, and today I want to share about Happy Little Plants Protein Puffs.
These Protein Puffs are highly snackable. They are light and crunchy and come in three flavors: Nacho Cheese, Ranch, and Cinnamon & Sugar.

I first heard of Boiron homeopathic medicines at a conference that I attended several years ago. Until then, I had never tried any homeopathic products. I started to take Boiron Oscillococcinum whenever I felt some sort of sickness was coming on. This product made me a Boiron believer!
Thanks to Moms Meet, I had a chance to try Boiron Acidil Meltaway Tablets. These tablets are designed to treat occasional heartburn or acid indigestion symptoms. We all know the feeling of an upset stomach after over-indulging, or eating certain “trigger foods” (e.g. spicy, fried, or acidic). I took Acidil after a couple of meals during this holiday season and it provided almost immediate digestive relief. You can also take these tablets before you eat, if you anticipate ill effects. The meltaway tablets are quite convenient for those who do not like swallowing pills. Boiron Acidil is appropriate for use by adults, or children 12 years and older.
Speaking of fried food, my son often requests fried chicken at home. I wanted to try a “reboot” recipe that eliminated the mess and extra fat of deep frying. See the recipe below for oven-baked chicken that has a crunchy exterior thanks to panko, Japanese bread crumbs.
Baked Crispy Chicken
Ingredients:
1/2 tsp Salt
1/8 tsp Garlic Powder
1/4 tsp Cayenne Pepper
3/4 tsp Chili Flakes
1/4 tsp Black Pepper
1 tbsp Olive Oil
1/2 cup Panko Bread Crumbs
1/4 cup All-Purpose Flour
3-4 bone-in Chicken Breast Tenderloins
1 Egg – beaten
Directions:
Preheat oven to 400 degrees. Combine salt, garlic powder, cayenne pepper, chili flakes, black pepper, olive oil and panko bread crumbs. Set aside.
Coat chicken pieces with flour, dip in the beaten egg, and cover with panko bread crumb mixture.
Arrange the coated chicken pieces on a wire rack that has been placed on top of a rimmed baking sheet. Bake for 30 minutes, or until cooked through.

I am excited to tell you about another company that I first heard about through the Online Nourished Festival: Kay’s Naturals. This company is unique because it makes gluten-free snacks with plant protein as the main ingredient.

We brought along some Kay’s Naturals Protein Pretzel Sticks on a recent beach outing. I enjoyed their light and crispy texture. One serving contains an impressive 12g of protein and 4g of fiber. I thought he Cinnamon Toast flavor had just the right hint of sweetness.
If you like your snacks on the spicier side, you will enjoy the Jalapeno Honey Mustard flavor. It definitely has a kick!

I first heard about Beviva PURPO foods through the Online Nourished Festival. The founder of the company was diagnosed with Ulcerative Colitis in 2011. Through research of both Western and Chinese medicine, she found that the purple sweet potato is a fiber-rich antioxidant powerhouse that can aid in minimizing gastrointestinal discomfort and inflammation.

First of all, I love the colors of these sweet potato chips, which use orange, yellow and purple sweet potatoes. The colors and taste of these chips remind me of Thanksgiving! They are nice and crunchy and have just a tinge of natural sweetness. My kids liked them as well.
Beviva Sweet Potato Granola
I also really liked the visual appeal of the Sweet Potato granola. The natural purple color from purple sweet potato (the main ingredient) is so pretty! I used some as a topping for vanilla yogurt. It is light and crispy, and contains little chewy pieces of dried fruit.
PURPO All-in-One Cereal Cups
These convenient cups contain a packet of the Sweet Potato Granola and a packet of the PURPO Instant Oat Mylk. All you need to do is add water to the PURPO oat mylk powder and add the granola. There is even a small spoon included in the cup, which my son appreciated. I can see how these portable cups would be convenient for those who are looking for digestive-friendly food that can be eaten while traveling or camping.

When my sister asked me if I wanted to try a new type of “really good” vegan ice cream, of course I said yes! She brought over a pint of “A Lot of Chocolate” Brave Robot Animal-Free Dairy Ice Cream that she had received from her neighbor, who started the company. My family was not sure what “animal-free dairy” ice cream would taste like, but we all agreed it was delicious!

It is crazy how much Brave Robot’s creamy texture and taste resembles dairy ice cream. I would not be able to guess that no cows were involved in the making of this ice cream. The key ingredient of this vegan and lactose-free ice cream is animal-free whey protein–who knew? This is not a low-calorie or low-fat ice cream by any means. However, we found that eating just a little at a time goes a long way in satisfying our ice cream craving.

I decided to use Hungry Harry’s Yellow Cake Mix to bake some cupcakes. As you can see, the texture of these cupcakes was nice and fluffy. I would challenge anyone to guess that these cupcakes are gluten-free. There are suggestions in the directions about how to make these cupcakes also egg and dairy-free, but I just used eggs and milk since these ingredients are not a concern for our family. All of the Hungry Harry’s mixes can be adapted using the ingredients that are safe for you and those you are baking for.
